Protein Pancakes

Ingredients:

 

  • 1/2 cup all-purpose (or oat) flour
  • 1/2 cup vanilla protein powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp melted butter or coconut oil


Instructions:

 

  1. Melt butter/oil, set aside.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients in another bowl, add melted butter.
  4. Combine wet and dry – don’t overmix; some lumps are okay.
  5. Heat a non-stick skillet over medium-low, grease lightly.
  6. Pour 1/4-1/3 cup batter per pancake; cook 2-3 mins per side until golden.
  7. Serve with fruit or syrup.
